Bali Hai Cafe on a Winner with Head Chef Karl McPhail

For many years the Bali Hai Resort and Spa has been one of Broome's favourite bespoke properties. With its distinctly Balinese architecture and styling the resort makes a contemporary statement on Broome's historical and cultural links to Asia. Situated within an easy 10 minute walk of the world famous Cable Beach, the Bali Hai is popular with beach lovers and those looking for a relaxing break in Broome.

Last night resort owner Andy Guidera hosted a tasting evening to launch the season opening of the Bali Hai Cafe. Approximately 60 people attended new Head Chef Karl McPhail's introduction to Broome and the Bali Hai. It was an informal evening consisting of tasting plates of dishes that will be featured on the menu this season. The first dish that was offered was ocean trout cured with secret spices, sugar, salt and citrus with a dill garnish. It was served with dollops of  wasabi mayo and citrus flavors. The trout was perfectly cured with the wasabi mayo and citrus providing the perfect balance of flavours with a clean finish on the palette. 
The ocean trout was followed by two small pieces of fresh Cone Bay Barramundi deep fried and served with a red curry sauce. It was easily enjoyed with fingers allowing us to dip the fillets into the sauce. The combination of the crispy crunch from the golden batter with the moderate red curry sauce was a delight. For our palette we would have liked more heat in the curry sauce however it was pitched at the right heat for the majority. The final dish we tried on the evening was lamb cutlets with pea and mint arancini balls with a red wine jus. The lamb was perfectly presented and served rare as lamb should be. The pea and mint arancini balls were a contemporary interpretation of the classic lamb complimentary flavours. 

It was a great evening at the Bali Hai, fantastic food and icy old beer. If Chef McPhail can maintain the standard he has set at the tasting night, the Bali Hai Cafe should enjoy great patronage through the season from locals and visitors alike.
